With the development of the townspeople's culture, sake brewing technology improved, and a diverse range of sake varieties emerged during the Edo period. In the mid-Edo period, “izake” (sake shops where customers could drink on the premises), which became the origin of the terml “izakaya” (Japanese pub), appeared. This gave rise to a culture where ordinary people could casually drop in.
